Potato, Ham, & Egg Casserole

Egg casseroles are really common in the Midwest. We love them for a dish to prep the night before. We love them for a quick breakfast to have on hand.

But a lot of times, they are one note when it comes to texture, that note being mushy. But this potato, egg, and ham casserole is the opposite of that.

We use extra crispy tater tots, lots of cheese, and ham that will give lots of texture in every bite.

This casserole is also not using any bread so it does not need to sit overnight. From start to finish, this egg casserole can be done in 35 minutes.

So, don’t give up on the egg casseroles! There are good ones out there that are delicious! Let us know what you think in the comments.

Details & Tips

This egg casserole is really straightforward to make. There are few steps, but I promise, it is worth it. The first thing to start is the tater tots. I like to use Roots Farm Fresh Crispy Hash Browns. They are a tater tot, but bigger around and thinner. The texture is so great for this dish. Cook them a few minutes past package instructions to get them extra crispy. This will help them stand up to the egg mixture.

I also like the ham to be cooked, well done. Some might call it burnt, but I really like it to have a deep browned, crispy texture all over. This is going to add texture as well. When cooking the ham, use a large enameled cast iron pan so you can cook the egg dish in the same pan. My favorite for this dish is this Lodge skillet.

The egg casserole is done when the center of the egg dish is still a little jiggly but everything is set. Be careful not to overbake it as it will dry out easily.

Switch up the cheese and meat if you want! This is great made with ham or bacon as well!

Storing the Egg Casserole

The Egg Casserole is best eaten right away, but we do love to meal prep this and have it on hand in the fridge. It reheats in the air fryer or microwave really well and is perfect for the busy weekday mornings.

You can also freeze this casserole to keep it fresh, longer. This does not have cream in it, so it will not turn watery when frozen and thawed.
