Details & Tips
This pumpkin loaf is really easy to make. It is also great made ahead. It stays moist for a few days with that streusel topping and glaze. And yes, you heard that right. There are two toppings. We top the bread with a streusel topping before baking. Then, when it comes out of the oven, we top it again with a coffee glaze. You could opt for one or the other, but the combination of the two are just the perfect bite of different textures, sweetness, and little bitterness from the coffee.
This is considered a sourdough bread because we are adding sourdough discard. It is not going to ferment or create a long process. It is, however, going to lend a nice moisture and flavor to the bread. If you do not have sourdough discard, you can leave it out!
This recipe is written to make two loaves. This is because this pumpkin bread freezes really well. So whenever I make it, I make two loaves so we can have one in the freezer for a quick breakfast for another day. This recipe is easy to cut in half if you only want one loaf. You can also make a loaf and some muffins. These bake up wonderfully as muffins and are just as tasty.
Customize
You can choose to do one topping if you don’t want to do both. I think the combination is a perfect bite, but I get that it might be a little too much for some!
Try a traditional glaze, excluding the coffee, if you don’t like the taste of coffee.
Storing the Pumpkin Bread
This bread will stay moist on the counter in an airtight container. The glaze helps lock in the flavors and moisture, making this a really good make ahead bread.
The Sourdough Pumpkin Bread is also great for freezer prep. The recipe is written to make two loaves. Throw one in the freezer for a quick breakfast down the road. When freezing, skip the glaze. When you are ready to use the bread, thaw it and then top it with the glaze.
