Maple Pumpkin Muffins

The easy pumpkin muffin we all love, but homemade with no refined sugar. And I promise, they are just as good!

The viral three ingredient pumpkin muffins are always a go to in the fall. But, a lot of times they are made with a box spice cake which is full of preservatives. I thought we could do better.

So, I took that viral recipe and made it homemade. The spices are still there. The sweetness is still there. And the moister from the pumpkin is still there.

There is nothing that this muffin doesn’t have, compared to the easier version. And honestly, they really don’t take much more time to make!

So give these a try! They will be your family’s new favorite muffin, and a healthier choice. Let us know what you think in the comments!

Details & Tips

These pumpkin muffins are my homemade version of the viral 3 ingredient pumpkin muffins. And I promise, they are just as easy to make. We are essentially making a homemade spice cake, then adding in the pumpkin puree and other ingredients to bring everything together.

Now, there is nothing wrong with the viral recipe. I just think we can do better, especially when it is an easy swap! The boxed spice cake in the original recipe has preservatives and refined sugar. This recipe takes BOTH of those things out. Yes, you read that correctly, there is no refined sugar in these muffins.

Maple syrup is what sweetens the muffins. It adds the sweetness but also adds a slight maple flavor that pairs really nicely with the pumpkin. These muffins are just as sweet, just as moist, and just as good as the viral recipe.

I have found that these muffins stick to certain muffin liners. I always use parchment wrappers which seem to work really well. Here are my favorite muffin liners that ensure muffins don’t stick!

This recipe is also great made into pumpkin bars. Top with a cream cheese frosting and they will be a hit!

Top the muffins with a cream cheese frosting, too, if you feel crazy! It will be delicious.

Storing the Muffins

These muffins will stay fresh on the counter for a few days. They stay nice and moist if stored in an airtight container. I personally think they get better after they sit for awhile.

These are also great to freeze and have on hand for quick mornings. They thaw quickly and taste just as good as freshly baked. They are perfect to throw in a lunch box or to someone in your family as they run out the door for the day!
