Monster Scotcharoos

Chewy, salty, sweet, and made without corn syrup, these Monster Scotcharoos are a healthy version of a classic. It is a simple recipe, taking a scotcharoo and adding the ingredients of a monster cookie to bring two treats into one.

I am not going to lie, when I was testing this recipe, I almost felt bad for changing them up because the original recipe is just so good. But I knew there was an easy swap for the corn syrup so I just had to try it. And it worked!

Now, I know what you are thinking, sometimes, just have the unhealthy treats. Which yes, sometimes we do. But when you can swap out some ingredients to make them a little healthier, why not do it!

I hope you enjoy these as much as we do! They are so easy to make and so delicious. Give them a try and let us know what you think in the comments!

Details & Tips

Bars!! We love our bars in the Midwest! They are a category of desserts all on their own. They come in all different varieties but scotcharoos are at the top of everyone’s list, I think! These Monster Scotcharoos are a twist of that classic bar and they are so easy to make!

As I mentioned, these are free of corn syrup and refined sugar. We have swapped the corn syrup for honey and the cane sugar for coconut sugar. You will not even know the difference. They are still incredibly chewy, yet they are held tightly together with that sticky, peanut butter mixture. The crispies are going to be our first chance to swap in something a little better. Seven Sundays Chocolate Crispies are a great option, being glyphosate free and naturally sweetened.

We are adding some classic monster cookie flavors, the first being oats, of course! A few other mix-ins really put these over the top. Candy-coated chocolate and chocolate chips are really what are going to give the bars that monster cookie energy. This is another healthy swap that is easy to make. Using Unreal Chocolate Gems are giving you a dye-free candy that has less sugar and no fillers, compared to other brands. Guittard Chocolate Chips are also a really great option for a better choice chocolate chip.

Mix the candy in while the mixture is still warm so they have a little time to soften and even melt a little. When they set up, there will be a variety of textures, making you want to keep coming back for more.A good sprinkle of sea salt helps cut the sweetness and gives a salty bite on top. These truly are so good. Give them a try!

Customize

Use whatever crispies you have. I like to use Chocolate Crispies from Seven Sundays. But use whatever you have on hand.

You can sub the honey and coconut sugar for corn syrup and cane sugar if you prefer. This would give you the classic recipe we all know and love. But don’t be afraid to try the healthier version! I promise, you won’t even know the difference!

Storing the Scotcharoos

These Monster Scotcharoos will store on the counter for a few days. Just keep them in a glass container with a tight lid. They will start to dry out after a while so be sure to keep them tightly covered.

They also freeze really well. Cut them up into bars, spread them out a little, and then throw them in the freezer. This way, you always have a healthier treat on hand when you need it!
