Chipotle Chicken Stuffed Sweet Potatoes

A little spicy, a little sweet, and the perfect amount of cheese! These Chipotle Chicken Stuffed Sweet Potatoes are so satisfying and really fun to make.

I have been making a version of these stuffed sweet potatoes for a few years now, so I thought it was time to share the recipe. They are great as an appetizer, a main dish, or a meal-prepped option for busy weeknights.

They fall in the same category as a potato skin, except they are stuffed with plenty of meat and some Greek yogurt, making them high in protein. If you are looking for an easy meal that is full of flavor and protein, this is the recipe for you.

We hope you give it a try. And as always, let us know what you think in the comments — we love to hear from you. Enjoy!

Details & Tips

These stuffed sweet potatoes are a take on a traditional potato skin appetizer, but packed with chicken and spices. The combination of the sweetness from the potato and the smokiness from the chipotle chicken is so delicious.

I have made so many different varieties of stuffed sweet potatoes, but I keep coming back to this one. I think it's because of the flavorful chicken. Everything goes so well together, and when they are baked, the cheese melts over everything, making them addictive to eat. We enjoy them year-round, but I tend to crave them in the fall and winter months when we want a hearty meal.

The chicken mixture is so good, I could honestly just eat that for a meal. It has greek yogurt and a little of the sweet potato flesh in it. These two ingredients are going to give the mixture a smooth texture. The flavors of the two also help tone down the chipotle flavor a little bit. It the perfect pairing.

I know this recipe has several steps: prepping the chicken, baking the potatoes, cooking the chicken, assembling, and baking the stuffed potatoes. But these make an excellent meal-prep dish. Read below to see how I like to prep them for our busy weeks.

If you want to make these dairy free, you can certainly skip the yogurt and cheese. They are just as delicious this way.

Serve with greek yogurt or sour cream, cilantro, salsa, or whatever toppings you like. The sky is the limit!

Prepping and Storing the Stuffed Sweet Potatoes

The stuffed sweet potatoes can take a while to make from start to finish. I typically will make them on the weekend when I have more time. But I also love to make these as a meal prep to have on hand for those busy nights where we need a quick meal. On the weekend, I will bake the potatoes, prep and cook the chicken, and then assemble the stuffed potatoes. Then, I store them in the fridge so they are ready to go. They reheat well in the oven. Simply bake them until the cheese is melted and they are hot throughout.

Once baked, the stuffed sweet potatoes will last for a few days in the fridge, reheating really well too. There are a lot of options to make these a quick meal!
