Pumpkin Butter Overnight Oats

We really love a quick breakfast these days. And these pumpkin butter overnight oats check all of our boxes. They are healthy, protein forward, and really delicious. They are also really fun to make. My girls love to help out with these and I take all the help I can get.

Overnight oats can sometimes be a little one note as far as flavor and texture. To be honest, I have tried them in the past but haven’t loved them. But I wanted to try some as another option for a quick breakfast.i also happened to have some pumpkin butter in the fridge and it was just begging to be in these overnight oats! So here we are, with a really delicious version of overnight oats! They aren’t the prettiest, but they are good! We add a ton of flavor with yogurt, pumpkin butter, and salt. We add a little texture with some cocoa nibs and pumpkin seeds. So if you have tried overnight oats and not loved them, give these a try!

Details and Tips!

I like to make these in a wide mouth, 6 ounce mason jar for an individual serving. This recipe will make just one serving. In each jar, you will add oats, chia seeds, Greek yogurt, pumpkin butter, a little cinnamon, a little salt, and maple syrup. The measurements are all up to you and your preferences so use it as a starting point and adjust them to your liking!

Once you have all of the ingredients in, you will pour milk over everything until it is completely covered. Give it a mix and then top with cocoa nibs or pumpkin seeds, whatever you like! Cover and store in the fridge. I like to keep my oats in the fridge for a day before eating. I will make them in the afternoon for eating the next morning.

What you need!

  • Quick oats - I like One Degree Organic Sprouted Oats
  • Chia seeds - look for organic
  • Greek yogurt - plain or vanilla
  • Pumpkin butter - recipe here! It’s easy to make and really delicious!
  • Cinnamon
  • Salt
  • Maple syrup
  • Milk - I use whole, raw milk

  • Serving size - you can make as many servings of this as you want and make it a large container. We love individual servings because the girls think it’s fun. But do whatever is easiest for you.
  • Spices - the flavors are going to warm with the cinnamon and pumpkin butter. You can definitely tone down the cinnamon a little. Just do whatever you think you will like best.
  • Sweetener - the maple syrup in this recipe is not a lot as the pumpkin butter also has maple syrup in it. Feel free to add more if you like a sweeter breakfast! You can also use honey or raw sugar if you don’t have maple syrup on hand.

Pumpkin Butter Overnight Oats

They might not be cute, but they are a healthy and hearty way to start your day. They are packed with all sorts of good nutrients and some protein. They are also packed with all of the favorite fall flavors!

  • 1/4 cup rolled oats
  • 1 tablespoon chia seeds
  • 2 tablespoons greek yogurt (plain or vanilla)
  • 2 tablespoons pumpkin butter
  • 1/4 teaspoon cinnamon
  • 1 tablespoon maple syrup
  • salt (just a pinch)
  • 1/4 cup milk (whole preferred, more if needed)
  1. In a small bowl or mason jar, add in the oats, chia seeds, greek yogurt, pumpkin butter, cinnamon, maple syrup, and salt. Give it a rough stir.

  2. Pour in the milk until everything is covered. give it another stir making sure the milk is incorporated. Add more milk if needed to make sure everything is completely covered in milk.

  3. Top with cocoa nibs, a little cinnamon, or a drizzle of maple syrup.

  4. Cover with the lid and place in the refrigerator overnight, up to 24 hours.

  5. Serve cold. Enjoy!
