The apple crumble top is what really makes this focaccia something special. As it would traditionally be made with sugar and brown sugar, this recipe is a healthier option. It just requires a few simple swaps to make everything a little healthier. Don't get me wrong, you are still eating some forms of sugar. But, they are a much better option and taste just as good as the traditional. So here are some simple swaps to make
- sugars - Coconut sugar is a really great option when you want a brown sugar taste but don't want to use brown sugar. I can find coconut sugar very easily at Walmart or Thrive Market! We are also going to use maple syrup for some added sweetness and maple flavor.
- apples - Apples are a fruit you want to buy organic if you can. Apples are sprayed with pesticides and other chemicals. We are looking for a gala, honey crisp, or Granny Smith, mostly. Truly you just want a sturdy apple that will cook up nicely in the oven.
- flour - An organic flour is key here. I use a locally grown and stone ground flour. Again, flour is highly sprayed with pesticides and other chemicals so that is why it is important to buy organic flour if you can. There are many different options that are very easy to find at grocery stores.

Apple Cinnamon Sourdough Focaccia
Sweet, savory, chewy, soft, this focaccia has it all! It is simple to make using simple ingredients. Perfect with a cup of coffee on a crisp, cool morning!
For the sourdough focaccia
- 1/2 cup active sourdough starter
- 2 cups water (room temperature)
- 3 cups all purpose flour (or bread flour)
- 2 tablespoons olive oil
- 2 teaspoons salt
- unsalted butter (for greasing the pan)
For the apple topping
- 2 apples (honey crisp or granny smith, chopped fine)
- 1/2 cup flour
- 1/4 cup coconut sugar
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 4 tablespoons unsalted butter (cold, cut into cubes)

In a large glass bowl, mix the starter and water together until combined. Add in the flour, oil, and salt and mix together with a danish dough whisk or wooden spoon. Once it is mostly combined, cover with a damp towel and let sit for 1 hour.

Remove the towel and do a series of 8 stretch and folds. You do this by holding one end of dough, letting it stretch toward the counter, and then folding it onto itself. The more you do, the firmer the dough with become. Repeat this step 2 more times allowing 30 minutes in-between for rest. Once the final stretch and fold is complete, cover with a damp towel and let it sit at room temperature for 8-12 hours, overnight.

Grease a 9x13 glass dish with a generous amount of softened unsalted butter. Turn the dough out into the greased dish and gently push it to the corners of the dish. Cover with a towel and let it rest 2 hours. It will puff up slightly.

Preheat the oven to 425 degrees.

In a small mixing bowl, mix the apples, flour, cinnamon, salt, and coconut sugar together. Cut in the butter with your fingers until it is about the size of peas.

Spread the apple mixture all over the top of the bread dough.

Bake for 30 minutes or until the top is golden brown and the edges are bubbly.

Let cool in the pan for 30 minutes before enjoying!
