Bacon, Egg, Tater Tot, and Cheese Burritos

These are hearty, filling, and so fun to make. These breakfast burritos are full of my kids' favorite foods and are a meal prep dream. They store in the freezer well and reheat in just a couple minutes for those busy weekday mornings! They are also a little less messy than you would think, making them okay for breakfast in the car.

I am in this phase of life where I need a quick breakfast most mornings in the week. My oldest is off to preschool and my two younger kids still need fed before we leave for drop off. We also don't live all that close to the preschool so we are getting up, ready, and fed, having to leave pretty early in the morning. The key for us is having quick, nourishing breakfasts in the freezer that are quick to grab out and reheat in just a couple of minutes.

I shared a freezer breakfast sandwich that you all loved so much so I wanted to make a burrito version, as a breakfast burrito is by far my kids' favorite breakfast food. When making these, I wanted to make them with as little mess as possible, so I cooked the egg and cheese onto the tortilla and then put some tater tots and bacon pieces in the middle. I figured this way less can fall out when they are eating it. But they will also probably make just as big of a mess in the car but I did try, I promise!

Details and Tips!

So let's walk step by step through how to make them. First, you are going heat a small skillet over medium heat. Melt a little butter in the skillet. In a small bowl, whisk together an egg and add some salt and pepper to taste. Once the skillet is heated, dump in the egg and twist the pan around to distribute the egg all around the bottom of the pan.

Quickly, we are going to top the egg with shredded cheese, we like cheddar, and then place the tortilla on top of that (I used our sourdough tortillas here). As the egg sets, the cheese and egg with adhere to the tortilla. Once the egg is set, just after a couple of minutes, flip over so the tortilla can get a little crispy.

Slide the tortilla and egg out of the pan onto a board and assemble! I did tater tots and bacon in ours as those are our favorite combinations. I really recommend using Roots Farm Fresh Potato Tots! They are made with avocado oil and a much healthier choice, seed oil free.

Roll up the burrito and repeat the process until you have as many burritos as you would like. Once the burritos have cooled slightly, wrap them in parchment paper and store them in the freezer for up to 3 months. To reheat them, leave them in the parchment and place them in the oven at 375 for 7 minutes or until heated. You could also microwave them for 2 minutes, flipping half way through.

What you need!

  • eggs
  • shredded cheese - you can do whatever you like best. We typically will do cheddar cheese.
  • small tortillas - about the size of a small skillet. I make up a batch of sourdough discard tortillas and use them here.
  • bacon - or sausage, whatever your favorite breakfast meat is.
  • Potato Tots - Roots Farm Fresh is our favorite! Cook them to extra crispy!
  • Parchment - for wrapping up the burritos.

Customize!

  • eggs - you could most definitely just make a bunch of scrambled eggs and assemble them like a traditional breakfast burrito. This is just a fun spin on the classic!
  • meat - use whatever breakfast meat your family likes best. We prefer bacon but breakfast sausage would also be great!
  • potato tots - I like the addition of tater tots in a burrito, mainly because I just love them most of all. But you could do a hashbrown or even hashbrown patties would be good. Sweet potatoes are also great in these.

  • 8 eggs
  • 1 cup cheddar cheese (shredded)
  • 8 tortillas (small)
  • 1 lb bacon (cooked, uncured, nitrate and nitrite free)
  • 1 bag potato tots (cooked to extra crispy)
  • unsalted butter (for cooking)
  • salt (to taste)
  • pepper (to taste)
  1. Heat a small skillet over medium heat. Melt a little butter in the skillet to coat the bottom.
  2. In a small bowl, whisk together an egg with salt and pepper to taste. Once the skillet is heated, dump in the egg and twist the pan around to distribute the egg all around the bottom of the pan.
  3. Quickly, top the egg with shredded cheese. Then place the tortilla on top of that. Cook for just 2 minutes or so until the egg is set. Flip over the tortilla, allowing it to crisp up slightly for a couple minutes.
  4. Slide the tortilla and egg out of the pan onto a board and assemble! Place five tater tots and once slice of bacon in the middle of the egg.
  5. Roll up the burrito, tucking in the ends, and repeat the process until you have as many burritos as you would like.
  6. Once the burritos have cooled slightly, enjoy!
  7. To freeze, wrap them in parchment paper and store them in the freezer for up to 3 months.
  8. To reheat them from frozen, leave them in the parchment and place them in the oven at 375 for 7 minutes or until heated. You could also microwave them for 2 minutes, flipping half way through.
