Freezer Breakfast Sandwiches
They are cheesy, meaty, and so delicious for a a freezer breakfast sandwich. They have been a staple for us in this busy season of school. Make these ASAP, you won't be disappointed!
When I was younger and living on my own, I will admit, I loved a freezer breakfast sandwich. I would always get the classic egg, sausage, and cheese on a croissant or English muffin. Looking back, they were not good!! But for some reason, it is one of those low qualify foods that I really liked.
I was looking at the breakfast sandwich freezer section at the store a few weeks ago and I am happy to report they have some better options! But I personally don't think anything beats a homemade freezer breakfast sandwich. They are really simple to make. You can just add them to your meal prep for the week! And the best part is that they heat up in no time for those busy mornings where we can't find enough time to do it all! If your child is anything like mine and won't eat the school breakfast, these breakfast sandwiches will save you on those mornings!

Details and Tips!
Making these could not be more simple. If I am making these for the freezer, I like everything to be room temperature or cooled slightly when assembling to make sure nothing gets overcooked when I go to reheat them.
I start my making the egg. I like to do a scrambled egg for these because they reheat well. Here, I am making six sandwiches so I will do 6 eggs. I cook them low and slow in a non-stick pan, undisturbed until the bottom of the is completely set and the top has very little unset egg on top. I gently flip it and cook for just a minute or so, and then remove it from the pan onto a wood cutting board. Don't rush this, the key is medium to medium low heat so the egg does not burn on the bottom.
When assembling these sandwiches, cooking the egg is honestly the hardest part! I like to assemble these on my sourdough english muffins. They are just a favorite in our house so I always have them on hand, and they are the girls' favorite! I also like to do sliced cheddar cheese and Amylu Chicken Sausage patties. I slice the egg into 6 strips, roll them up, place them on the bottom piece of the english muffin and then top the egg with the sausage, cheese, and english muffin top!
I store these in parchment bags in the freezer for up to 3 months. But honestly, they usually only last a a couple weeks! When it is time to reheat, I just throw the sandwich in the bag in the microwave for one minute and forty five seconds, and they are ready!

Customize!
The customizations here are endless. Starting with the egg, if you prefer a fried egg, I think that would be fine! I would just cook it a little on the underdone side so you don't risk it getting rubbery in reheating.
The breakfast sausage could be swapped for your family favorite, or even bacon! The cheddar cheese could be swapped as well for whatever your family favorite is.
Lastly, the English muffin. You could honestly do anything here. You could do a croissant, or a bagel, or whatever you want! Have fun with these and make them how your family likes! This way, they are way more likely to eat a great, healthy breakfast!

Freezer Breakfast Sandwiches
The perfect freezer staple for busy mornings when you don't have time to get it all done! They are high in protein and a hearty breakfast for everyone in the family.
- parchment bags
- 6 English muffins
- 6 eggs
- 1 tablespoon unsalted butter
- salt (to taste)
- pepper (to taste)
- 6 slices cheddar cheese
- 6 breakfast sausage patties (Amylu is a great option)
To cook the eggs

In a non-stick skillet over medium heat, melt a tablespoon of butter.

Crack 6 eggs into a glass measuring cup or medium bowl. Season with salt and pepper to taste, and whisk together until smooth.

Once the butter is melted and coating the bottom of the pan, gently pour in the eggs.

Let the eggs cook undisturbed for 3-4 minutes or until the bottom is completely set and the top of mostly set. Quickly but gently flip the egg over and cook for 1 minute on the other side. Set aside to cool.
To assemble the sandwiches

Using a fork, break open the English muffins by moving it around the sides.

Cut the large egg until 6 even strips. Gently roll them up.

Place the egg on bottom half of the English muffin. Then top that with the sausage and cheese. Finally, top it with the top half of the English muffin.

Place the sandwich in the parchment bag and roll the top of the bag to close. Store them in the freezer for up to 3 months.
To reheat the sandwich

Place the frozen sandwich in the bag in the microwave. Microwave for 1 minute.

Carefully flip the sandwich over and microwave for another 45 seconds.

Carefully take the sandwich out of the bag and enjoy!
