Raw Apple Cake

Sweet, full of apple, yet moist and fluffy! This Raw Apple Cake has been in my mom's family for years and I am so excited to share the recipe with you!

Today is the first day of Fall!! Here, it does not necessarily feel like Fall quite yet. The days are still quite warm, but we are holding out hope that it will cool off soon!

I had to start the first day of fall with one of my mom's family recipes. This Raw Apple Cake brings back a lot of memories, all revolving around Fall! This cake is exactly why I love to bake and cook. I taste this cake, and am immediately transported back to being 10 years old standing in my Grandpa's Timber.

My Grandpa (my mom's dad) was quite the guy. He was extremely quick witted, had the rosiest cheeks, and loved his family more than anything. He also LOVED this Raw Apple Cake. I remember my mom making it for him most times he would come stay with us.

Each Fall, my grandpa would have a Wiener Roast, which was basically a big bonfire where we would roast hotdogs in the fire for dinner. We would spend a solid day collecting branches and cleaning up trees in the Timber, and then pile it all up for a huge fire. Most of my uncles and cousins would come help and it really was so much fun. Although, I was one of the younger cousins so I didn't do much but follow my cousins around. In the evening, the whole family and a lot of friends would come to the Timber to enjoy an evening of being together, eating, drinking, and laughing.

There were also swings that hung from a tree branch. Actually, I am not sure I would call it a swing. It was a rope tied to a branch with a board holding up a bucket lid for the seat. Definitely not the safest, but we loved it!

My grandpa would park an old wood trailer near the fire which held all of the food that everyone would bring. My mom always made 2 or 3 of these raw apple cakes. Everyone loved this the cake and looked forward to eating it. Each time I eat this cake, it puts a smile on my face. The memories of my Grandpa and those Wiener Roasts are so very special.

The Weiner Roasts no longer happen each year, but this raw apple cake still is going strong. My mom makes a couple for my family and my sister's family each fall and we all look forward to it just as much as I did growing up. This cake means a lot to my mom and I am so excited to share it with all of you!

Details and Tips!

This cake is really simple to make. You just mix together the dry ingredients, then cream the butter and sugar together, add in the egg and vanilla, and then alternate adding in the dry ingredients with a cup of room temperature coffee. Then you fold in some diced apples and put it in a 9x13 buttered pan. Then you top the whole thing with a sugary crumble topping and bake!

This is the true recipe, with just a couple slight additions. The first is the vanilla just giving the flavor a little more depth. The second is the nutmeg for some added warmth. You can certainly skip these two things and will still have a great cake!

  • cinnamon
  • nutmeg
  • salt
  • coffee, room temperature
  • apples
  • brown sugar

Customize!

There really isn't a customization here. You can definitely leave out the nutmeg if you don't have it on hand, but other than that, just follow the recipe! it is great served with ice cream or a strong black cup of coffee! This can also be served for breakfast as a coffee cake or a dessert after dinner!

The best thing about this cake is that it gets better as it sits. The second day, the sugar topping almost melts into the cake and makes it even more moist. This makes this the perfect cake to sit on your counter for a few days, just in case you need a bite of cake throughout the day!

Raw Apple Cake

Sweet, full of apple, yet moist and fluffy! This cake is like a hug from Fall that we all need. It is also extremely easy to make!

For the cake

  • 2 cups sugar
  • 1 cup unsalted butter (room temperature)
  • 2 eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 3 cups all purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 4 cups tart apples (chopped, about 5 medium apples)
  • 1 cup coffee (room temperature)

For the crumble topping

  • 1/4 cup brown sugar
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon all purpose flour
  • 2 tablespoons unsalted butter (room temperature)

For the cake

  1. Preheat the oven to 350 degrees. Butter a 9x13 glass dish very well and set aside.

  2. In a mixing bowl, add in all ingredients for the crumb topping. Work the butter into the sugars, flour and cinnamon using a fork or your fingers. Set aside.

  3. In a medium mixing bowl, whisk together the flour, salt, baking soda, cinnamon, and nutmeg. Set aside.

  4. In a stand mixer fitted with the paddle attachment, cream together the butter and sugar for about 3 minutes on medium speed until light and fluffy.

  5. Reduce the speed to low and add in the eggs, one and a time, allowing the first to mix in before adding the second.

  6. Add in the vanilla and allow everything to incorporate well.

  7. With the mixer on low, add in the flour and coffee in 2 or 3 alternating batches. After adding the last batch of flour, stop the mixer just short of the dry ingredients being mixed in completely.

  8. Dump in the apples and fold them in gently. It will seem like a lot of apples, but they will bake down and be so delicious. Trust the process!

  9. Once the apples are folded in, pour the batter into the well-buttered 9x13 dish. Spread the crumb topping evenly over the top and bake for 55 minutes or until a toothpick inserted into the middle comes out clean. Depending on what type of apples you use, it could take a little longer to bake.

Store in an airtight container at room temperature for up to 5 days. This cake will continue to stay moist for quite a few days thanks to the sugar topping and apples! This cake also is great to bake and throw in the freezer for when you need a quick dessert or coffee cake.
