Pumpkin Oatmeal Bake

Do you ever feel like fall breakfasts are kind of the same? We have pumpkin bread, pumpkin muffins, pumpkin scones. And all of those recipes are typically the same combination of ingredients, just in different ratios. Well, in my house, we love an oatmeal bake. So I thought, why don’t we make an oatmeal bake, but with fall flavors. So, we give you, the Pumpkin Oatmeal Bake.

It is bursting with our favorite fall flavors, but the oats lend a nice chewiness to the dish that makes it almost addicting to eat. It is easy to make and reheats really well. It is a great thing to make ahead for those busy weekday mornings.

And, my favorite part of the whole thing, the natural orange color that the pumpkin gives. It not only tastes like fall, but it also looks like fall. What could be better?

By simply combining our favorite breakfast with our favorite flavors of fall, we have the perfect new breakfast! So, make it, grab a bowl and put some in a bowl, maybe top it with a little salted butter, and eat along side a cup of coffee on a crisp October morning. I promise you will not regret it! Details & Tips

The Pumpkin Oatmeal Bake is taking our favorite breakfast and adding our favorite fall flavors. The traditional spices are going to be there. The chewiness of the oatmeal will add in the perfect about of bite. And the pumpkin mixture will wrap the whole things into this custard that makes so well.

Something to keep in mind when baking with pumpkin is the moister. Pumpkin has a high water content. This means that we do not need as much liquid as you might typically see in an oatmeal bake. The pumpkin also has a sweet flavor. So we are going to ramp up the amount of spices that go into this. They will help cut the sweetness but also stand up to the other flavors in the dish.

There really is no real prep to this dish. It is really quick to bring together. It does take a while to bake, so plan accordingly. It is great stored in the refrigerator for a few days and reheated. We love to make this on Sunday afternoon and then have it ready to go for the busy weekday mornings. It is a fun change to our ordinary breakfasts.

Customize

Regarding the spice blends, you are welcome to exclude the nutmeg and all spice if you do not have them. You can just add a few extra dashes of cinnamon and it will taste just as good.

I bake this in a 9x9 glass dish. But a fun variation would be baking them into individual portions using a cupcake tin!

Serving and Storing the Pumpkin Oatmeal Bake

We love to serve this with a dollop of vanilla greek yogurt. The pumpkin bake is really rich so the yogurt helps cut that, and also adds a little more protein!

This Pumpkin Oatmeal Bake stores really well in the refrigerator for up to 4 days. Simply reheat it in the microwave or in an air fryer. You can also freeze this dish. I love making a batch of the oatmeal bake, but baking them into individual portions using a cupcake tin, and freezing them. They are easy to grab each morning and reheat really fast. They are even great for on-the-go breakfast which I know can come in handy!
