Chipotle Chicken Stuffed Sweet Potatoes

A little spicy, a little sweet, and the perfect about of cheese! These Chipotle Chicken Stuffed Sweet Potatoes are so satisfying and really fun to make! They great for any time of year and any occasion.

I have been making a version of this recipe for years and I figured it was time to share it with you all! The flavors have taken off in many different directions but we have landed on this version being our absolute favorite.

These Chipotle Chicken Stuffed Sweet Potatoes are spicy from the seasoning on the chicken, sweet and creamy from the sweet potatoes, and full of flavor. I have made these for a football Sunday party and for a weeknight meal. They hit the spot any time of year and for any occasion! I always tend to crave these right as the weather turns to cooler temperatures in the fall. Or on a Football Sunday. There is just something about a potato skin style appetizer that hits just right while watching football!

The Stuffed Sweet Potatoes are meal prep friendly as well. If you are into meal prepping, you could most definitely make up the chicken and bake the sweet potatoes ahead of time and assemble everything once you are ready to make them. They are so versatile and so satisfying! And they make really good leftovers.

Details and Tips!

These Chipotle Chicken Stuffed Sweet Potatoes are easy to make, but they take a little bit ofttimes, only because you do have to bake the potatoes and cook the chicken, and then bake everything again. But they are so worth it!

The first thing you will do is bake the sweet potatoes for about an hour or until they are fork tender. I brush mine in melted butter and then sprinkle them generously with course sea salt. This is going to give them the most flavor and make the skin a little crunchy. We are going to eat the skin so we want it to be flavorful.

While the potatoes are cooking, we are going to cook the chicken. I think chicken thighs are best here. Not only are they cheaper, but they also have a lot more flavor. Chop them into small pieces and add sprinkle the spices on top. We are going to use a blend of chipotle, chili powder, garlic, and some others to really give the chicken a lot of flavor. I like to cook my chicken in butter until nice and deeply browned.

Once the potatoes are fork tender, pull them out and let them cool until they can be handled. Cut them in half lengthwise and scrape out the inside flesh. We are wanting to leave about a 1/4 inch boarder of potato attached to the skin for sturdiness. Sometimes the potatoes will kind of fall apart which is no big deal. Just do your best!

Mix the cooked chicken, a little of the potato innards, some greek yogurt, and some cheese together and pile it high into the potato skins. Sprinkle with some more cheese and bake again to get the cheese golden brown. I like to serve these with sour cream or greek yogurt. You could also serve them with a little salsa and lettuce on the side.

What you need!

  • sweet potatoes - traditional or white sweet potatoes. I personally have been loving the white sweet potatoes lately.
  • chicken thighs - chicken breasts are fine too!
  • salt
  • chili powder
  • garlic powder
  • onion powder
  • pepper
  • paprika
  • chipotle powder
  • cheddar cheese
  • greek yogurt - or sour cream
  • butter - just for cooking the chicken in!

Customize!

  • potatoes - You could do any potato here. A russet or an orange sweet potato would be great as well. Just use whatever you have!
  • seasoning - The seasoning mix can be adjusted to your family. You could make this spicier with more chipotle flavor or you could tone it back a little. This recipe is not overly spicy. Our girls eat it and love it!
  • toppings - You can truly go as far as you want to go with the toppings. Lettuce would be nice, as well as sour cream or greek yogurt. Those are our favorites. Cilantro would also be nice here.

Chipotle Chicken Sweet Potato Skins

A little spicy, a little sweet, and so delicious! These will be your next favorite healthy meal or appetizer for your next party!

  • 3 sweet potatoes (large size)
  • 1 lb chicken thighs (thawed)
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon oregano
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon chipotle powder
  • 1/4 cup greek yogurt (or sour cream)
  • 1 cup cheddar cheese (shredded)
  • melted butter (for brushing)
  • sea salt
  1. Preheat the oven to 400 degrees. Place the whole sweet potatoes on a baking sheet lined with parchment and brush them with the melted butter. Sprinkle them generously with sea salt.

  2. Bake for an hour or until they potatoes are fork tender. Then set them aside to cool slightly.

  3. While the potatoes cook, make the chicken.

  4. Cut the chicken thighs into bitesize pieces. Place the chicken pieces into a bowl. Sprinkle the salt, chili powder, garlic powder, onion powder, oregano, pepper, paprika, and chipotle powder over the chicken and mix it well to get the chicken coated in the spices.

  5. Heat a skillet over medium high heat and melt a couple tablespoons of butter. Once the pan is heated, place the chicken in the pan and cook until the chicken is cooked through, about 6 minutes. Feel free to cook a little longer if you prefer your chicken to be a little charred. Set aside.

  6. Once the potatoes are cool enough to handle, cut them in half lengthwise. Remove the potato innards, leaving 1/4 inch of potato still attached to the skin. Place the potato skins back on the baking sheet.

  7. To the cooked chicken, add the greek yogurt and 1/2 cup of the sweet potato innards. Mix together.

  8. Divide the chicken mixture into the potato skins. Top with the shredded cheese.

  9. Put the potato skins back in the oven for 20 minutes or until the cheese is golden brown.

  10. Serve with lettuce, sour cream, cilantro, salsa, or whatever else you want! Enjoy!
