Naturally Sweetened, No Refined Sugar

It is a berry cobbler? Is it a berry cake? I am not really sure! But I do know that it is so tasty and you should give it a try!

This time of year, we go through fresh berries like crazy! They are the perfect snack also hit that sweet tooth without eating sweets! We always have a ton of berries on hand.

I always clean out the fridge on Sundays, getting rid of anything that has spoiled. We also eat any leftovers for lunch on Sunday just to get everything fresh for the start of the week! Even though we a lot of berries throughout the week, sometimes they start to spoil faster than I would like. This is where my inner-childhood scraping by mode kicks in. I cannot stand throwing food out that has spoiled that we didn't eat. Each week, I am so intentional of my grocery shopping making sure we are not buying too much of anything so we eat everything that we have. Is this how every parent is? Or just me?

But anyway, that exact feeling is where this recipe came from! One Sunday, we had too many berries to eat that would go bad soon, so I made a cobbler, which is also kind of a cake!

A Berry Cobbler or a Berry Cake

I am calling this a cobbler, but it also a little bit like a cake. It has berries on the bottom that cook down and create a delicious syrup when baked. It is topped with a batter that puffs up when cooked. It gets the browned, crispy spots around the edges. The texture one everything together is just too good.

No Refined Sugar

This Berry Cobbler is even better than most because it has no refined sugar in it! Everything is sweetened with maple syrup and honey. I am always trying to swap out refined sugar for natural sweeteners like maple syrup or honey. This is a great way to reduce sugar intake and add nature-made sweetness.

While it doesn't seem like a huge swap, it makes a world of difference, especially in our kids! Limiting or eliminating the amount of refined sugar is key for blood sugar balance, inflammation, and overall health.

Customize!

You can really use any fruit for this recipe. If your family prefers peaches, blueberries, strawberries, cherries or apples, all would be an easy swap in this recipe. Peaches and cherries are our favorite swaps to make!

This version of the recipe is sweetened with honey and maple syrup but you can use one or the other for the entire recipe if you want! I have used all honey or all maple syrup and it turns out great both ways!

Berry Cobbler

For the berry mixture:

  • 1 1/2 cups blueberries (fresh or frozen)
  • 1 cup strawberries (fresh or frozen)
  • 2 tbsp lemon juice
  • 3 tbsp honey
  • 1 tsp all purpose flour

For the cobbler topping

  • 1 3/4 cup all purpose flour
  • 3 tsp baking powder
  • 1/4 cup pure maple syrup
  • 2 tsp vanilla extract
  • 5 tbsp unsalted butter (melted plus more for topping)
  • 1 cup whole milk
  • 1 tsp salt
  1. Preheat the oven to 350 degrees.
  2. In a lightly greased 9x13 dish, add in the berries, lemon juice, honey, and flour. Mix everything together and set aside.
  3. In a medium mixing bowl, whisk together the maple syrup, melted butter, vanilla and milk until combined.
  4. On top of the wet mixture gently add the flour, baking powder, and salt. Gently whisk the dry ingredients together and slowly incorporate them into the wet ingredients until everything is just combined. Try not to overmix.
  5. Gently spoon the batter all over the berries. Level off the top to create a somewhat smooth surface. Cut 3-4 tablespoons of butter into cubes and sprinkle them over the top.
  6. Bake for 35 minutes or until a toothpick stuck into the center comes out with just a few crumbs of cobbler. The top should be golden brown in spots and the berries should be bubbling on the sides. Let sit for 20 minutes before serving!

This would be great topped with sweetened whipped cream or ice cream!

Store the cobbler at room temperature for up to 3 days.
