Chickpea and Veggie Bowl

The Chickpea and Veggie Bowl is the perfect quick lunch. It is filling, meatless, and full of protein.

Happy Friday! It is the last Friday of Lent. I always a little sad when Lent is coming to an end with Easter. I feel like life kind of slows down during Lent and then once we celebrate Easter, we are hustling until the holidays are here.

Easter is one of my favorite holidays so I am really looking forward to a weekend with family. And as if one weekend of celebrating Easter wasn't enough, we will celebrate next weekend again with my side of the family!

We have made some yummy treats which I cannot wait to share with you all soon. We got a little extra festive this year, but it is so easy to do with two little girls who love to be in the kitchen with me. I love watching their little minds work in the best ways, like making special treats for special people in our lives to make them feel extra special.

I couldn't let this Lenten season end without sharing what has become my favorite lunch for the last 7 weeks. Since I do not eat meat on Fridays during Lent, I needed to come up with a filling lunch that has protein and is still satisfying. This Chickpea and Veggie bowl has been the ticket. It is completely customizable to whatever I have in the fridge. And you honestly cannot mess it up.

What you need

These Chickpea and Veggie Bowls are really so easy to throw together for a really easy lunch or dinner. Here is all you need:

  1. Chickpeas - I like to use the ones that come in a carton in water. You can also buy the dried chickpeas and rehydrate them.
  2. Veggies - I like to add in peppers, cucumbers, onions, and whatever else I have on hand that needs used up.
  3. Eggs
  4. Lettuce
  5. Sauce

Customize!

These bowls can be customized to whatever you like. I do like the chickpeas because they are a great source of protein, so if you are aiming for that in your lunch, you will want to keep those or switch out for another high protein bean.

I like to add veggies to this just for a little crunch and nutrients. It also lightens it up a little more. I also add a little lettuce for that same reason. Today, I added spinach because that is what I had on hand. It is great with arugula or romaine as well.

Depending on the day, I will top the whole thing with either eggs or cottage cheese for even more protein. You honestly cannot go wrong. I do love to add hot sauce to the egg version. If I am doing the cottage cheese topping, I like to drizzle with a little olive oil and lemon juice.

Chickpea and Veggie Bowl

This is the perfect lunch. Packed with protein and taking no time to whip up, you will love it!

  • 1/4 cup chickpeas
  • 1/2 cup spinach
  • cucumber (sliced)
  • 2 eggs
  • salt
  • pepper
  • hot sauce
  1. Start by cooking the eggs however you like them. I am a runny yolk girl, myself!
  2. Once the eggs are cooked, put everything together in a bowl. Top with salt, pepper, and hot sauce to taste! Enjoy!
