I have been on this health journey for a while now, like a lot of other people out there. That is what sparked me to make recipes that were healthy for me and my family. The only hang up I was having was condiments. I really love condiments. Like a lot. Kollin makes fun of me because my bites consist of more sauce or dip than actual food. But hey, we like what we like!
Enter in – homemade mayo. The store bought healthier avocado oil mayos have a weird taste, am I right? I just couldn’t do it, and then I just wanted to real deal instead. Well, I figured out that if I make it myself, it doesn’t have the weird taste, and I haven’t bought mayo since. It is so easy to whip up and uses the most simple ingredients. Now full disclosure, it will not be fluffy thicker consistency that you get from store bought mayo. But it tastes just as good and is so much better for you.

Stay tuned for different recipes using the mayo as a base. Like a burger sauce for burger bowls, 1000 island dressing, French onion dip, and more! It is really so versatile and a great thing to have on hand. You can also adapt this to fit your taste. If you like it a little saltier, add more salt! If you want a garlic flavor in there, throw in some garlic powder! Make it what you want! I do recommend not adding much more of the apple cider vinegar as it can affect the texture of the mayo, but other than that, do what you want!

- Add the egg yolks to a big mixing bowl. Add in the salt, mustard, and apple cider vinegar. Give it a quick whisk with a hand mixer fitted with the whisk attachment, or whisk by hand, just to get everything combined.
- While continuing to whisk, add in the cup of avocado oil gradually.
- Once the avocado oil is all mixed in, continue to whisk for 30 seconds just to ensure all of the oil is incorporated. You know it is ready when the mixture is a light yellow color and you can see the tracks of the whisk as you mix it.
